Mysql is the go.

Here's an idea

Rather than 'just' software, why don't you get yourself and your 
students to setup a mysql server.

I'm a bit partial to the 'TurnkeyLinux' servers.
This server could well be suitable for a bit of database edumacation:
virtual and 'normal' available.
for educational purposes, i'd reckon get the virtual version, that way 
you can snapshot it before letting the tiny taxpayers loose on it for 
every practical task you set.
