Kevork, agree that Natcoll are great books! 

Andrew,
Obviously, VITTA, PixelED and ICTEV have all run software training sessions
at various times. They may be able to suggest trainers who will come to you.
At PixelEd, it is mainly members (especially the committee) sharing skills
with their colleagues. Sometimes we have used tertiary students or even
lecturers we know but no one comes to mind lately.
Adobe has certified trainers but not sure of availability or cost etc? CAE,
Neighbourhood Houses, TAFEs all run this sort of training too - they may be
able to organise something onsite for you?

You could also look at the Lynda.com training. It's on-line or you can buy
it on DVD. Educational prices are very reasonable and you can select up to 5
different courses eg advanced, intermediate, beginners etc. Participants log
in and their progress is tracked. They can skip bits that don't interest
them and go back again and again if something is a bit hazy. That way you
are catering for individual needs. 
You get access to great resource files to work on.
Of course, downside is people need to be motivated to put aside the time to
view and then try the techniques but at least they can work at their own
pace, at a time that suits them! 
The length of lessons vary - some are less than 5 minutes others up to about
10 minutes, although to work through an entire course might add up to many
hours!
There are some samples you can view and judge the quality of the
presentations.
