Hi Jenna, 
Welcome aboard the list...
First, look for info on the 3in6 comp and other online comps for next year, it fits with your subject,
Secondly, if you could list the software you have available to you for use next year, you can bet that there'll be plenty of offers of help...we just need to know what you are using.
Quite a few of us may be finished now so some responses may come in January when they get back but I reckon you will see some help before next friday arrives.

Heres a couple (ok, a bit more than a couple!) of ideas..
Flash,(cartoons, product promos-ads, simple games etc)
Gamemaker,
Scratch,
Publisher,
Make a movie promoting something at school or just a fun item! (I'll be doing this myself) and perhaps link it to the school web site or intranet site
Get an electronic/digital portfolio going with the kids, it gives them a learning experience plus they take responsibility for organising their documents visually..give them a template you can create ...again, I am doing this too next year!
Try a thematic approach for a topic or two...yep, me too..
Make web with 'bells and whistles' using whatever software you can!   gonna try too!
See if you can get a blog or a wiki going with your kids..This one's a newie for me for next year but gonna give it a go! Gunna try a wiki and see how it goes(could get messy!)
If you are allowed youtube access, perhaps, with guidance, get the kids to make a promo and post it(but get it approved first!)
Also, 'teachertube.com' is a resource which has lots of ideas...see if one gives you an idea...
oh, naturally, check out www.mckinnonsc.vic.edu.au for ideas too!( guru Mark's page!) (or is it .gov.au..not sure)
oops, must also refer you to the www.Vitta.org page too, they also have handy links to stuff!
Heck, you could even survey the students and get some of their ideas too, they might surprise you!
