Tracey,

The first place to look is in the tutorials folder in the
installation directories of Photoshop. There is a very cute "Mr
Potato Head" exercise that I gave my students after I had
practiced it a few times. Ditto for Flash and Illustrator. They
are very well documented on your own machine. After that, the web
is replete with Photoshop/Flash/Illustrator tutorials of all levels.
