Hi Katie,
Mac and PCs are pretty much same, especially with Macs nowadays with same Intel Chipsets.
Macs tend to be more expensive but look cooler and have iMovie and Garageband.
Generally you're looking for a computer with at least minimum:
Multicore i5 CPU
8Gb RAM - don't scrimp on this one
And then
A decent video graphics card
A large hard disk to store files on.

So PCs will do the job fine. You may feel attached to Macs more due to an aesthetic thing or familiarity. But software looks and works the same (Premiere, Sony Vegas, etc). In the end, doesn't matter as long as it's reliable and the students can do what needs to be done..

Adobe Premiere will only run on a 64bit machine. (CPU and OS) Take that to your tech people. That's how I won my battle.
