[vet-mm] Projects and portfolios for year 12

As a new yr 12 VET IDM teacher are there any restrictions of the types of tasks we can give the students?

I am using the PIXEL ED yr 12 resource from a couple of years ago, and chose 3 projects to do.

Can I get away with this or do I need to have two projects and 1 Portfolio?
