Photo-manipulation activities are an excellent ice-breaker and intro.
Swapping heads/faces around on class teachers or cloning wrinkles out of
the boss is a good way to learn some basic techniques in a fun way. You
could also introduce the liquify tool for more fun. If you think its
dangerous using photos of people they know, provide some suitable stock
imagery to work with.

For a holiday activity ask the students to take digital photos over the
break that fit with a theme -- something like 'texture','reflect' or
'summer'. Then when they return next year, have them use their photos in
a grid-based photo-montage exercise. The result is often a good asset
for the folio.
