Hello Lina,
Unfortunately, such specific advice does not exist. Unlike a "straight" VCE subject, we don't have much in the way of course outlines. The VET MM teachers assoc - PixelEd was formed because we needed to help each other come to grips with it all! 

For assessment tasks you'll find guidelines in this doc:

These relate to the type of task eg for a portfolio it says things like-
"The time allowed to complete and compile items for the Portfolio should be a minimum of five hours and a maximum of 12 hours. The assessor should take into account the nominal hours allocated to the
specific unit/s when devising the guidelines for the number of items to be included"
There are other bits of supplementary advice from VCAA, but nothing terribly definitive, IMHO.

As far as the actual content and to what depth you have to cover things, you need to read the training package modules/units of competency and the assessment criteria for the various tasks and try to work it out from there. Those of us who have been teaching it from the start are still trying to work it out!!! eg everyone has a different view on how much scripting our kids need to know. 
Each year, the exam presents another surprise and we discover we should have covered something that we didn't!  So have a close look at the past exams.

Although a bit dated, the QATS material is a good guide to the dimensions of the tasks, (see Warringal Publications website)as are the sample tasks on the members only section of the PixelEd site (www.pixeled.org.au)
Binary Blue (www.binaryblue.com.au) is also a good starting point.
