[vet-mm] Setting Assessment Tasks

Hi All,
I'm new to Cert III and just really need to know what other teachers/schools
do regarding setting the assessment tasks eg Product 1.
For example, am I correct in thinking that students have 15hrs to complete
the task over a number of consecutive periods or can I spread the 15hrs over
a term.

Any advice appreciated...
