The UK's famous Open University is now starting to offer "open source"
educational material. Check out their "OpenLearn" pages:
http://openlearn.open.ac.uk/
They are using Moodle<http://moodle.org/mod/glossary/showentry.php?courseid=11&concept=Using+Moodle>for
at least some of these projects, although I don't think you can
download
materials as Moodle courses just yet (I think they're working on this). The
OU has always been a major innovator in distance-learning, so you can
probably expect a lot more material to come online in due course.
I believe MIT is also involved in offering course material online, although
I've no idea if they're using Moodle.
