YEs I would do the latest CSS but html5 is it worth it?
HTML5 will teach new skills to be used where?
If people in industry are using HTML4 then just use that.

With so many web technologies around flash /AS3/silverlight then the version of html should be a concern

That's great Andrew, however I will still be teaching my kids HTML5 with CSS3 and not HTML4 and CSS2. 

Personal preference is yours to choose.
